Vegetable soup “Ängamat” served with marinated asparagus, seared chicken mousseline, herb emulsion, and browned bread

Main course:

Lightly cured cod fillet with dill and lemon served with boiled potatoes and wine-braised white cabbage. Accompanied by Sandefjord sauce, cucumber, trout roe, and crispy celeriac

Roast veal served with confit onion, potato gratin, pepper-roasted carrot tops, veal jus, dill, and horseradish

Dessert:
Pavlova served with citrus curd, rhubarb, marinated strawberries, and chocolate crumble

Seafood Wallenbergare served with an herb-infused white wine sauce, mashed potatoes, glazed beans, and lemon

Pan-fried chicken served with baked fresh white cabbage and leek, fried potatoes, wild garlic aioli, and Madeira jus flavored with truffle

Dessert:
Milk chocolate mousse with rhubarb compote and nut crumble
