Smoked-Cured Salmon served with baked golden beetroot, browned mustard butter, cabbage crudités, and citrus honey & sour cream crème

Main course:

Tomato- and Herb-Baked Pollock served with sauce beurre blanc, roasted broccolini, and potatoes, as well as dill-pickled kohlrabi & house-cured lumpfish roe

Veal Wallenbergare served with potato purée, browned butter, peas & raw-stirred lingonberries

Dessert:
Raspberry and White Chocolate Mousse with crystallized milk chocolate & raspberry jelly
