Cold-smoked salmon with potato rösti, citrus-pickled onion, cultured cream, trout roe & mustard pickles

Main course:

Herb-baked haddock fillet served with baked cauliflower, confit potatoes, vermouth sauce, fennel & air-dried ham crisps

Braised beef roulades filled with smoked pork belly, served with leeks, carrots, parsley potatoes, blackcurrant jelly & pickled cucumber

Dessert:
Pecan tart with orange glaze & chocolate ganache
