Shellfish soup flavored with cognac, served with shellfish mousseline, chive crème, and kohlrabi

Main course:

Seared salmon baked with gremolata, served with herb potatoes, Sandefjord sauce, roasted golden beetroot, and browned bread

Herb-roasted veal, served with purée of white root vegetables, lingonberry chutney, charred savoy cabbage, port wine jus, and crispy potatoes

Dessert:
Apple tart made with Aroma apples, served with vanilla cream cheese and caramelized almonds
